Making maple flavour – cross post with Science365

I’ve contributed a guest post to Science365, a blog about science in every day and daily life. It’s a short description of the first time I tried making my own maple essence. The overall project is bigger and involves a complete seed-to-plate process, but here’s a window into how I went about the first stage and the somewhat unexpected results. I will be reattempting this at some point, and I’ll write about it again then as well as the other half of the project which is growing my own fenugreek. (mmmm, tasty, tasty maple!) Enjoy!
